Vineyards: Most of the terroir around Maimbray is Kimmeridgian limestone, with the village sitting on a broad band of rocks including marls peppered with Exogyra virgula (fossilised, comma-shaped oysters), Calcaires à Astartes (fossilised bivalve molluscs) and Calcaire de Tonnerre. The domaine practices sustainable viticulture, with all grapes harvested by hand, no weed killers or use of industrial fertilisers.
Vinification: Each parcel is vinified separately in temperature controlled stainless steel to enhance the characteristics of the individual vineyard and give complexity to the final wine.
Maturation: The wine rests on its lees over the winter, before bottling the following spring.
